What in the world is "Pho?"
- Pho (pronounced "fuh") - is also known as Vietnamese Noodle Soup and is made of savory broth, fresh herbs, rice noodles, veggies, and meat or tofu.
- It's a very popular street dish in Metropolitan areas all over the world!
- Authentic Pho is made with beef, but chicken and tofu are just as tasty
- Pho is simple to make, yet the results are complex and intoxicating
- The word Pho has many possible origins: A) Derived from French dish "pot-au-feu" (beef stew) or B) The english word "fun." We personally prefer option B because the flavors the spices used in Pho are fun!
- Making delicious Pho depends on the quality of your broth
- Every recipe is a little different, but these ingredients are common: star anise, cinnamon, cardamom, nutmeg, shallots, basil, ginger, garlic, cilantro, cloves, fennel seeds, fish sauce, hoisin, lemongrass, lime and sawgrass
- It's easy to make an extra big batch of broth and freeze it for future batches of hot and steamy Pho.
- Pho is comfort food at its best.

Vegetable Pho
Ingredients:
Broth:
8 c water
1 c onion, diced
1 c mushroom, sliced
10 garlic cloves, peeled and sliced
3 Tbsp soy sauce
12-1/4 inch ginger rounds
1 Tbsp brown sugar
1 Tbsp rice vinegar
1 tsp ground black pepper
2 cinnamon sticks
5-6 basil stems, leaves reserved for soup
2 cups greens, chopped
Pho:
1 8oz package rice noodles
1/2 pacakge or 8 oz tofu, diced into 1/4 inch pieces
2 cups bean sprouts
4 green onions, sliced
1/4 cup cilantro
1 cup basil leaves
1 lime
Directions
Broth:
1. Place all ingredients in large pot wtih 8 c of water.
Cover and bring to a boil.
2. Reduce heat to medium low, and simmer, covered one hour.
3. Strain broth, and return to pot, add thawed greens.
Pho:
1. Cook rice noodles according to package directions. Drain,
and rince under cold water.
2. Divide among bowls. Ladle broth over noodles, and top
with tofu, sprouts, greens, and green onions. Serve with cilantro, basil, and
lime.
