Curried Tomato Soup


What is curry powder? 

Curry powder is a unique mixture of savory, sweet, and spice that adds a bold yellow coloring and kick to foods.  Not only does curry powder add flavor and color, it also boosts the nutritional value of food.  Just 1 tablespoon of this super spice adds 2 grams of fiber and 1 gram of protein to a recipe.

Most curry powders produced in North America is a blend of spices containing: 
  • Coriander (dried and ground cilantro) 
  • Fengugreek (bitter herb from a plant belonging to the pea family)
  • Turmeric (bitter plant in the ginger family. Gives a deep yellow-orange color)
  • Cumin
  • Black Pepper
  • Bay Leaves
  • Celery Seed
  • Nutmeg
  • Cloves
  • Onion
  • Red Pepper
  • Ginger
Although curry powder is typically associated with foods, it is gaining popularity as a salt-free seasoning in soups, stews, sauces, marinades, vegetables, and meat dishes.  Curry can even be used in more unconventional ways by ramping up scrambled eggs, potato salad, and even hamburgers!  Add some curry to your diet by adding curry to your next meal or eating our curried tomato soup!  Your taste buds will thank you!

Curried Tomato Soup


Ingredients: 
2 Tbsp. olive oil
1 large onion, chopped
2 cloves garlic, minced
1 Tbsp. curry powder
2-28 oz.cans tomatoes
4 cups broth or water
1/4 tsp. cinnamon
Salt
4 cups cooked pasta

Directions:


  1. Saute onion in oil for 5 minutes.
  2. Add garlic and curry powder, saute 5 more minutes.
  3. Add remaining ingredients except pasta and salt and simmer 25 minutes.
  4. Puree if desired, for a thicker/heartier base.
  5. Add pasta. 
  6. Add salt to taste.
