4 tips to getting breakfast into a busy schedule
1.     Shop smart: At the grocery store buy easy quick healthy foods such as: yogurt cups and bananas, sugar free fruit cups and whole grain breakfast bars, quick oatmeal and apples.

2.     Chop it up: Prep fruit (fruit salad), vegetables (quick omelet), and any other breakfast items as soon as you get home from the grocery store so its easy to grab on busy mornings.

3.     Plan ahead: Plan breakfast for a week so you don’t have to waste time choosing every morning.

4.     Freezer meals: Choose one day to cook up some breakfast casseroles, muffins, freezer oatmeal, etc. to have ready to go on your busy days.

APPLE PIE BREAKFAST COOKIES

PREP TIME: 15 min        COOK TIME: 15 min      TOTAL TIME: 30 min     Yield: 12


INGREDIENTS
  1 cup old fashioned oats
  1 cup quick oats
  ¼ cup ground flax seed
  ½ teaspoon salt
  ½ teaspoon cinnamon
  ¼ teaspoon each nutmeg and cloves
  2 eggs, beaten
  ½ cup unsweetened apple sauce
  cup coconut sugar or brown sugar
  ¼ cup coconut oil, melted
  1 cup diced apple pieces
  ½ cup toasted walnut or pecan pieces

  ½ cup raisins

INSTRUCTIONS
1.   Preheat your oven to 350 F.
2.   In a large bowl stir together old fashioned and quick oats, ground flax, salt and spices.
3. In a smaller bowl whisk together eggs, apple sauce, sugar and melted coconut oil. 
4. Add to the dry ingredients and stir to combine. Fold in the diced apple, walnuts and raisins.

5. Drop ¼ cup sized portions of batter onto a parchment lined baking sheet. Flatten the cookies slightly, as they won't spread in the oven.
6. Bake for 15-20 minutes until set. Let the cookies cool on the baking sheet before transferring to an airtight container.
