West African Peanut Soup



Let me introduce you to my good friend, Peanut Butter... (PB enters room)
"Hi, I'm Peanut Butter. Let me tell you a little about myself."
  • I was invented in the late 1800's as a remedy for bad teeth
  • You will find me in 9 out of 10 American homes
  • Americans consume an average of 3 pounds of me each year
  • In general, here is how folks prefer to eat me:
    • Women/Kids prefer creamy
    • Men prefer chunky
  • It takes 550 peanuts to make a 12 ounce jar of me!
  • A peanut is not actually a nut, it's a legume, like a pea, bean or lentil
  • Thomas Jefferson and Jimmy Carter were both peanut farmers
  • Peanuts contain healthy fats, protein, fiber and many vitamins & minerals!

West African Peanut Soup*


Ingredients: 
2 C onion, chopped
1 T olive oil
½ t cayenne pepper or other ground chilies
1 t grated peeled fresh ginger
1 C carrots, chopped
2 C sweet potatoes, chopped
4 C vegetable stock or water
2 C tomato juice
1 C smooth peanut butter
1 T sugar (optional)
Chopped scallions
Chopped roasted peanuts

Directions:
  1. Heat oil in saucepan over medium heat. 
  2. Sauté the onion in oil until it is translucent, about 5 minutes. Stir in cayenne and ginger. Add carrots and sauté a few minutes more. 
  3. Mix in potatoes and stock. Bring to a boil, then cover and simmer until the vegetables are very tender, about 15 minutes. 
  4. Puree with tomato juice (works best to use an actual blender, not an immersion blender), and return to pot. Stir in the peanut butter until smooth. 
  5. Check sweetness and add sugar if necessary. Reheat gently over low heat. Add more water, stock, or tomato juice to adjust thickness if desired.
