Peach Cookies

You know those desserts that stretch a smile across your face
because it feels like little pieces of heaven are falling into your mouth ? 


Such a dessert is our Peach Cookie. 
Our peach cookies are small in diameter. But they are extremely moist, with just a touch of  sweetness. 

We thought, you might need a wee break from soup recipes, nutritious-this, and nutritious-that. Although this cookie was showcased at Soup for Lunch, that's the only way it relates to soup as far as we're concerned.

You see, every Friday we spoil our customer's with a lovely homemade dessert, that's often served with Utah State University's famous Aggie ice cream.   

Part of eating a "balanced" diet is enjoying...let's say...peach cookies and ice cream...every once awhile. Why, in the name of health or size, deprive yourself of the joy that comes with eating a truly satisfying dessert? 

A infinitely wise dietitian, Tamara Steinitz, once said "80% of the time, eat what you should. While 20% of the time, eat what you want."

If  those voices in your head right now are saying..."Hmm... I think I want  peach cookies and ice cream after dinner tonight" then for once, listen to those voices in your head.

Peach Cookies*

Yield: about 30 mini cookies

Ingredients:
1 egg white
1/2 tsp. vanilla extract
1/3 cup butter
1/4 cup sugar
1/2 cup brown sugar
3/4 cup white or whole wheat flour
1/2 tsp. salt
1 tsp. baking powder
1 1/4 cup old fashioned oats
3/4 cup peaches, diced
1/4 cup raisins

Directions:
  1. Beat egg white with extract, butter and sugars in mixing bowl.
  2. Combine flour, salt and baking powder.
  3. Add to egg mixture and mix well with electric mixer.
  4. Stir in oatmeal, peaches and raisins.
  5. Use small scoop to drop onto greased cookie sheet.
  6. Bake at 350 for 15 minutes or until golden.
